Gluten-free, dairy-free spicy corn and pea stir-fry

This is a nice alternative to straight cooked peas or corn.


  • 1 can corn
  • 1 can peas
  • 1 tbsp coconut milk
  • ginger
  • cumin
  • ground red pepper or red pepper flakes
  • garlic
  • olive oil


Heat up a wok or skillet, then pour a little olive oil in it. Add the corn and the peas. Season with the ginger, cumin, red pepper, and garlic to taste. I basically treat them like salt or pepper when adding. Taste a bite to see if the seasoning is correct.

After the corn and peas have cooked a little while, add in the coconut milk. I guessed at 1 tablespoon. You want to lightly coat the corn and peas (or use more if you want a thicker sauce). Let the coconut milk thicken a bit.
